If you use the older installer then you just have to run updates once you have installed the default OS. But it is a good practise to update the USB installer when the new OS version is released, that way you keep up to date with things. I was always under the impression that with the mac os installer, you had to redownload it everytime a mac os uopdate was released for example, if you had 10.12.5 and then upgraded to the latesed then you reformatted and installed you had to update the system each time because if you used the usb installer, you were using an older installer.
