Simon, There is likely a "Take Control of MacOS Sierra Server" eBook out there. The Take Control series are usually quite good books. Other than that, there's good stuff just on the Net. Just do a search on what service you wish to get more detail on, along with MacOS Server in the search parameters and there's lots of helpful material. I've mostly did all my Server stuff the second way and I've got Leopard, Snow Leopard, El Capitan and Sierra servers all going within our domain.
