Hi John How are you telling disk utility to create the images? There's a few ways to do it and even more options. I've easily made master images of a hybrid CD in disk utility, in my case to make sure I have a backup of my OS X installation disks should I ever lose them. I've confirmed that it did save both portions, as these DVDs are hybrids as well. What I did was open disk utility, highlight the DVD Drive (note, highlight e *drive* and not the *volume* shown underneath it) then from the file menu, under the "New" submenu, select "image from device" where "device" is the name of your highlighted device. Now, when it is asking you to save the image, make sure you change the type of image to "DVD/CD Master." These will be saved with the extension of .cdr, though they are just in reality .iso files. It is very important that you highlight the device and not one of the volumes shown underneath it. Highlighting the named volume will give you the issue you are getting where the hybrid image is not saved, as it will only image that volume rather than the entire disk. Also, this is with Snow Leopard, with Leopard the menu items in disk utility are a bit different.
