Yes I started encrypting some time ago. And while it is good to do some things the slow way, I will jump in with both feet.

Will it be necessary to do any setup first or can I just restore? Also the issue I spoke of was in regard to the version of iOS 10.

Make sure you store a local encrypted copy for the restore at least that’s been
my experience. To be honest, I start my new phone as a new device and
reinstall my apps by hand. This prevents any problems from the old phone
moving over with the new. It however is slower and requires entering all your
data by hand so might not be worth it. It’s an old habit going back a long way
for me after doing software upgrades so entirely up to you. If you go the
restore route the encrypted backups store all your password data for critical
apps etc.

Good luck

I may come home with a new iPhone tomorrow. Someone had experienced some sort
of issue when restoring from an old iPhone. I will backup my old one prior then
restore to the new phone. Is there anything I need to be aware of? I've never
had to do a restore so this will be a new experience for me.
