Hmm, if you just want to jump between sheets in a single document it's
command-shift-bracket with left-bracket being the previous sheet and
right-bracket being the next sheet. These are the same commands to
switch tabs in Safari.

layout area where your tables are for a given sheet, and navigate left to the
sheet navigation tab group where you can select the sheet you want to work in.
Then after selecting your sheet you have two choices one, you can stop

area, or two, you can bring up the context menu for the sheet with Volvo shift
M and select the table you want to work in for that sheet.
Your second question number two as to renaming a sheet, in that same context

speaking the row numbers, You'll just have to get used to it.
BTW: I'm kind of surprised you couldn't find the way to move between sheets as
it's just a matter of an interacting and exploring the upper level of the app.
Also it's always a good idea to try to bring up a context menu for any element
that you want to find out more about.
