Hmm, if you just want to jump between sheets in a single document it's command-shift-bracket with left-bracket being the previous sheet and right-bracket being the next sheet. These are the same commands to switch tabs in Safari.

Also it's always a good idea to try to bring up a context menu for any element 
that you want to find out more about.
