Mail preferences, Accounts. Select the account, then Account Information tab. The pop-up button for SMTP servers should show the one currently in use. Choose Edit SMTP Server List from the menu that opens when you press that button. In this dialog, choose the server you’re changing, or add a new one. Set the hostname and other parameters on the tabs. This will be true for any standard account.
