Katie, Sorry, but that seems to be a bug with Mail in El Capitan. In other words, it’s not a configurable thing. In fact, I just saw a post from a guy on another list that specifically mentioned that this issue was still alive & well in today’s maintenance release. So, I suppose we’ll have to wait for another update.
