The way I dealt with tables was to resave the same document but in the doc with macros format, .docm. I've not seen this format before but it is there in the pop up button for the format of the documents. Then you should be able to interact with the tables. You won't even have to interact with it, VoiceOver will automatically do this and then you can use tab or just arrow keys to move round in the table.
This is how it was in the previous version of the Word preview, I've not tried this in the latest update.
