If I use VO-k to go into training on my device and hit VO-shift-m, it does tell me it simulates a hold. However, you'll notice that VO-shift-m, unless I'm just missing something, isn't listed in that document at all. That's why I asked if anybody knows of a complete list. Clearly at least one shortcut has been left out of that document. That's no disrespect to the author, it's entirely possible that the shortcut didn't exist until a later version of iOS, for example. But it also means there are more shortcuts, well, at least one anyway, than are given in that document.
BTW, since I mentioned before that the keys-to-go doesn't have an escape key, it actually does. The key above the accent, where escape usually lives, is a home key, but if you do fn-home, i.e. that key, it generates escape. If you happen to be looking for a bluetooth keyboard, check it out. I'm really liking it.
