I’m pretty sure that Notes autosaves the note when you exit it’s window. Kind of like in contacts where the app just saves the data without there being a save button. As to renaming, notes will simply use the first line of text as the note name - think of the first line as a title line. Of Course, as with anything else you hear, do a little experimentation on your own to verify.
