With some little difficulty.  Open iBooks on your Mac, and then use the File, 
Add to Library option to find and import your book.  Then use iTunes to sync it 
across.

One year of iBooks inaccessibility, and counting.  It makes me very annoyed.

The reason I don't use Dropbox or whatever is that you then lose the means to 
conveniently sync new books onto your phone.  If iBooks were to allow cloud 
upload and access from the Mac, and provide offline sync for iOS, that would be 
different, but it doesn't.
