If you just want the sync part, there is BitTorrent Sync or SyncThing.  These 
tools let you replicate changes across computers, in the fashion of Dropbox, 
but without a central server.  However, dumb clients like iOS devices can't 
access the data unless one of your machines is online at the time, and of 
course you don't get the convenience of maintaining a master copy and you'll 
have to remember to sync before a sync device is taken offline, or maintain a 
Mac 24/7 (I suggest a Mac Mini) to keep your master.  Yes, it's not as easy as 
Dropbox or iCloud, but it's safer.

In my opinion, Snowden showed us the power and determination of the US and 
British secret services, and their willingness to employ a tremendous battery 
of bulk surveillance tactics against innocent people.  I think that's an attack 
which we should all defend ourselves against to the best of our abilities.  I 
know, I know, but you don't have to be paranoid to care about your privacy.  
Just take steps to make it harder for the snoops, even if only a little bit.
