Hum, you could do it with itune if you can abide the thing.   
Personally, I couldn't get it to retain my encoder settings once I'd  
set them up, and so I switched to max.

Max has served me extremely well.  It supports a lot more formats than  
Itunes does, and it can intergrate with your itunes library if you  
really want it too.  I don't use nearly all the features, but I do use  
the audio conversion, cd ripping and tagging in flac and mp3 and it's  
very streamlined and nice.
