Hi, To delete all music from your iPhone, make sure iTunes Match is turned off on the iPhone, then in iTunes on your Mac, make sure that "Sync Music" is not checked in the Music pane. Apply your changes and all music should be removed. Sometimes, my favourite word in computer-land creeps up and "should" factors in, so, you need to confirm things on your iPhone. That is, go into the Music app, in the Songs pane and make sure that all have been removed. You usually can swipe up and delete any songs that were not properly deleted from the first process. Then you can go ahead and try setting things up the way you want them in iTunes on your Mac. Once you re-apply the changes, everything "should" be fine.
