According to this: https://wiki.videolan.org/Mac_OS_X/#Command_line you can use this command: /Applications/VLC.app/Contents/MacOS/VLC which seems to open with some kind of console. There's also an option to run without an interface using CVLC instead. I don't know anything more than this. I also don't know how to exit that console. There's more discussion on the above website.
