Hey Chris, It seems at this time the applications are not available to us via the source table in this version of iTunes. There are at least two ways of deleting apps. One is when you connect your phone to iTunes, go to the applications tab on your phone. There you will find two buttons. One button lets you sync all apps, and the other allows you to select the apps to be synced. If you select to determine the apps to be synced, navigate to the table listing your apps and only check those that you want to be transfered. Be sure to hit apply. The second method I'm aware of is to go to your iTunes folder on your computer. Look for a folder titled Mobile Applications. You can delete the app from there. On the Mac side anyway, if you don't empty your trash prior to a sync, iTunes elects to sync the app even though it's no longer in the Mobile App folder. It has been my experience that although the app may be deleted from the Mobile App folder, a icon still resides in the list when you are focused on applications in the source list of iTunes. A sighted individual can delete them with the mouse.
