Actually, VLC does not use the same MP3 encoders as iTunes and  
QuickTime, which is why you detect a difference in the audio quality.   
The best MP3 encoding was done with the LAME encoder, and Blacktree  
used to distribute a plugin for use with iTunes.  This is now horribly  
out of date, but you can download a copy that was updated by a member  
of the hydrogenaudio forums from this MediaFire link:

The zip file unpacks into a folder, and on Intel Macs you want to use  
the file named iTunes-LAME-3.98.2-x86, which you can copy into your  
Applications folder.  If you want to use the LAME encoder for ripping  
your CDs to MP3 in iTunes,  instead of pressing the "import CD"  
button, start up the LAME encoder app, tab from your selected settings  
to the first button and press with (VO-Space) to start importing.  You  
can tab to the second button and press (VO-Space) to stop.  Although  
the buttons are unlabeled, if you use VO-H you'll hear these  
identified as "Import checkmarked tracks. Hold shift to add more  
tracks.", and "Cancel encoding".

Anyone who wants to check the LAME encoding options or recommended  
preset combinations (besides using the defaults available in the plug- 
in) will have to do a Google search and/or read through the  
hydrogenaudio forum discussions.
