I don't have a monitor plugged in, and will not go out of my way to get one. I've tried plugging in the dvi-to-vga adapter thing, but I don't think it had an effect (I know apps which crashed or errored due to lack of video such as dvd player or anything relying on OpenGL didn't behave differently). I upgraded it with ram from newegg - I don't remember whether or not it was apple-licensed or whatever. It was certainly cheaper overall than it would've cost to get the mac mini w/ 2 gigs out of the box (believe it or not - that's apple for you). I'd disable the dashboard but really haven't bothered - I think I heard about some sort of commercial solution, but why run another app just to disable one which is already running (spotless to disable spotlight etc)? It doesn't sound right. Oh well... I've got on for a little over a year this way, I suppose I can continue. It's really finder which gives me the most grief - iTunes is pretty well-behaved since 8.x (excluding smart playlists which I have yet to try out again).
