Eclipse is a reasonably good option, especially with a fully Cocoa port in 
the works for version 3.5.

I've been playing with the nightly builds and they are working extremely 
well.

Eclipse is primarily a Java editor, however plugins exist for Python, Ruby, 
Groovy, C, PHP, HTML, JavaScript etc.

The 3.4 builds do have a few issues with VoiceOver, fortunately these have 
been resolved in SnowLeopard.

The other option of course is Xcode which is available as part of the Apple 
dev tools.

I haven't really spent much time with this so can't offer as much feedback.
