Are you using NatBib? I'm not sure, but I think doi=... is an option for NatBib, whereas you're trying to insert it as an option for BibTeX. If you're using NatBib, try adding doi=false to Document > Settings... > Document Class > Class options > Custom. Options specified here are passed down the line to loaded packages (which ignore the option if it's not one they know).
