schön mittig waren, wie ich`s gern hätte.
If you are not a mathematician, the AMS (American mathematical society) classes will not suit your
needs I guess. What kind of book are you writing?
For "standard" books I can recommend the KOMA-skript book class of the memoir class. They both
provide everything to adapt the layout of your book.

If you want to have the section heading centered, you can do this also with other document classes
than the AMS ones.
If you use the KOMA-skript book class you can change the alignment with the preamble command
\setkomafont see sec. 3.6 of its documentation:

But before you start with these fine tunings, you should first focus on your text. All fine-tunings
can be made later by adding a few preamble lines or setting document class options.

Unter-Überschriften mehr (geknurrt, aber dreingefügt). Vor allem:
nirgends wurde im Inhaltsverzeichnis die nicht mit Kapitel-Nr. versehene
Vorrede angezeigt!

Außerdem erscheint bei jeder pdf-Ansicht das Datum des jeweiligen Tages

Have you set the document language to "Deutsch"? LaTeX uses always the typesetting rules of the
document language (or the language of the text part in multi-language documents).
The LyX Userguide describes in sec. 3.9 some methods to adjust the hyphenation
manually.

Your words sound very harsh and a bit crude. LaTeX is a professional tool for writing long documents
and therefore the right choice for your application. But every program needs some time to learn it.
(If you don't like the approach of LyX/LaTeX you can also use other free software like OpenOffice,
AbiWord, KOffice, etc.. These programs use the approach of WYSIWYG (the MS Word approach).)
