A few things to try...
1. If you are using pdflatex in LyX, then save the files from Adobe as pdf instead of eps. I think this will avoid the preview issue altogether.
2. In Adobe use Print to PDF or Print to Postscript instead of Save As.
3. From the terminal, try eps2eps or ps2ps on your file. This may strip the preview.
