LyX > Preferences > Editing > Shortcuts

Search for key bindings with "zoom", and modify the one for buffer-zoom-out.

By the way, an N-dash can also be entered using "--" and an M-dash
using "---", which allows for nicer line-breaking than "–" and "—".
