As Günter points out, you can add shortcuts in the bindings file. Since beamer has quite a few environments that are unique to beamer, it might be worth creating a separate bind file and switching to it when you're doing a beamer presentation.
I also use beamer quite a bit, but I don't have the memory capacity for any more shortcuts. :-) So what I do is M-p followed by the space bar to open the environment drop-down list, then type the first letter or two of the environment name I want. If you type the first letter repeatedly (with minor pauses), you will cycle through all environments beginning with that letter. It's a bit more typing than a shortcut would be, but easier on my overloaded internal RAM.
