Aha,

I've got it. Just in case anyone else has the same problem, some option I was using on the (custom) latex document class was being passed through to the article class as the 'draft' option, which makes images disappear.

I've tested with 3 brand new documents with the same document class, and just one image in each child document, and it works fine, so I don't think it's my install, I think it must be something to do with these particular documents, but I can't find anything obvious.
