That is the way I do that.  This is an inlined formula, not a displayed
equation taking its own line.  When I introduce a special character, I will
do it as a single character in a math environment like this.  It should
display in the output as just the Greek character.  If you have a lot of
Greek characters (say, if you are actually writing something in Greek), there
might be a better way.

I don't have a good one for that.  LyX's find/replace does not search through
the math insets (why not???), but only plain text environments.  If I am
going to do a substantial amount of search/replace editing, I will open up
the *.lyx file in a text editor, and use its find/replace.
