There's a package "spotcolor" on ctan which provides access to the proprietary spot color schemes PANTONE and HKS (I didn't try it myself): ftp://tug.ctan.org/pub/tex-archive/macros/latex/contrib/spotcolor/ It only works with pdflatex. Apart from that, xcolor is the state of the art of color definition in LaTeX.
