I have been taching lyx for years. My approach is to first introduce
the basics of latex (what latex is, how it works, how does a latex
file look like, concepts of lable, reference, bibtex etc, how to edit
a latex file, what comands to use etc). I will force them to modify a
latex file, compile and view it.

After they have been tortured enough (nearly hate latex), I will start
teaching lyx and everything seems to be easy until I show them 'what
to do if lyx fails to compile'.

http://www.stat.rice.edu/~helpdesk/howto/lyxguide.pdf is what I have been using.
