Oh I now see what you mean. My mistake. In short, you can't. Natbib will allow you to choose the global option of Author-Year or Numerical citations, but there is a default \cite command that is used in either case. The other flavours in the drop down menu translate to different LaTeX commands such as \citeyear and \citeauthor. There's no way to choose one of these as the default.
