The predefined shortcuts M-m parenthesis will do this. E.g. press 'M-m (' when you are in a formula and you'll get \left( AND \right).

I attached a version of the file math.bind, that fixes the bug that M-m don't work with braces and brackets on some keyboards.
(This fix will be in LyX 1.3.5)
