the following all in tex (red)
\noindent\begin{tabularx}{\textwidth}{|c|X|c|}\hline
one & two & three \\
1 & 2 & 3 \\
a & b & c \\ \hline
\end{tabularx}
all columns marked through X always gets a variable width, in this
case the middle column has a width so that the whole table is
\textwidth wide.
