I use the built-in (and curiously named) "noun" style.  It probably shows up on
your toolbar as a button with an exclamation point on it.  Just use the mouse
to highlight the word or phrase you want to italicize, and click that button.

You can do it in the middle of a paragraph without changing the paragraph
style.  (Or anywhere else, for that matter. I sometimes use it in section
headings.)
