I just remembered something else to add:
When using greyscale (or colour) pictures, make sure they're no larger
then 200 dpi in resolution (unless, of course, you're planning on doing
prepress stuff).  This gives still reasonable results, while not making
the size of the resultant PDF file too big.  I reduced my PDF file size
quite significantly by doing that.  For plain black & white pictures,
you should make the resolution larger, or they'll be full of jaggies.
(Though I noticed Acroread has a "smooth edges" option which is on by
default, which makes things look nicer).
