There is a typo in the definition for the platypus, the figure refers
to ../doc/platypus.eps but it should be ../clipart/platypus.eps. I will
fix that bug for next release.

Since you are using rh 6.2 you should look, assuming that you have installed
the rpm, in /usr/share/lyx/clipart/platypus.eps

Another solution is copy the example to some directory that you can write,
copy also the platypus to there, and view the document from there.
