the best way is to use the package setspace, than you can
individual set linespace.
e.g. for the whole document \doublespace in latex preamble
in the text you can use the spacing environment
\begin{spacing}{2}
the two is the baselinestretch, it's a factor. 1 is
single spacing.
\end{spacing}
for eqnarrays you can use the latex command \jot2cm
or \jot3pt . Than you don't need the setspace-package.
all commands have to be placed outside the formulas.
