Would nested environments be very difficult to implement in LyX ? Something

It is already there. Help->userguide, search for "nesting".
Instant example: Go to the middle of some bullet list say,
and press shift+alt+right. (Or menu choice "increase environment depth).
Try putting a list inside lyx-code for a prime example of both
environments being active.
If you add a .layout file with support for other latex environments,
then nesting "just works" for such environments too.
