The new install does not overwrite the old install. You have to
"uninstall" first. From the installer:
Section "-Installation actions" SecInstallation
SetOverwrite off

You're correct; I just uninstalled and reinstalled, and resetting the
bind path worked.
The nasty part is that installing without first uninstalling went
through the whole business of showing the progress bar moving, running
the configure script, etc. So it gave no outward evidence that the old
version was not being overwritten (and, ahem, the About LyX help entry
offered no clue).
Well, this bug at least is past tense.
