Trouble is you can use \subtable in a figure float with a table and a
\subfigure in a table float with a figure.  And which you would want
will largely depend on how/whether you reference your figure/tables in
your text or not.

I have generally used \subfigure in figure floats for both tables and
figures since they are all part of the same story.
