Your XSL definition is too restricted: you can do any transformation you want with XSL. You can transform XML to XML (like HTML), but to anything else. Currently I transform DocBook XML files to the 1.1.6 LyX file format (which is not yet an XML one ;-) So, with XML native format exporting to various output formats is quite possible (latex included).
