Physically reaching over from the keyboard to the mouse and back is very
slow (even if we don't notice it much). When I use LyX I usually never
use the mouse, except for some hairy cases of navigation in mathed or
tabulars. If the whole point is to speed things up, bringing in the
mouse doesn't make much sense to me.
How about C-<up> and C-<down> for entering/navigating the completion
menu?
