Fine. (Although it my be interesting to know why the "other formats" toolbar
button allows access to "DVI (luatex)" depending on the pase of moon...)

To be expected. DVI and PDF use the same font, so missing characters will be
the same.

This is strange, as a missing ü was not reported!!!
May be the DVI-viewer is to blame. Is Jürgen complete with umlaut in PDF?

The PDF may look OK on first glance. However, I trust the error message
unless you really find the ‿ (203F UNDERTIE = Greek enotikon) in the PDF.
It is easy to overlook a missing one - that is why I appreciate the new
error reporting so much despite the work it gave us on cleaning up export
tests!
