Dear Mateusz,
The scope and complexity of the project is up to you. Choose something that you think you can comfortably finish in two months. More often than not, unexpected problems cause a delay so it's best not to be overambitious in the project. You can also include a "stretch goal" in case things go better than planned.

I think basic LaTeX skills are needed for the layout editor, but it may be possible to write the editor without knowing the details of LaTeX (others please correct me here if I am wrong).
