Never been mentoring, but ask Cyrille.

I guess some form-filling with Google; later giving general directions,
review patches, answering questionw, testing(?).

For how much work is this I think largely depends on the student chosen.
Given how bad we are at documentating the code and how much time we
have, independent (re)search is perhaps the most important quality
otherwise you spent your time on answering trivia (from our POV of course).
So I would check what type of question people have, they will be the same later 
:)

The comments I heard from other mentoring project was that at the end GSoC was
more valuable as a way how to successfully get new devs into the team than
finishing the project they started, that might other clue.
