I certainly agree with your thoughts on what normal users care about. However, a VCS can really improve the quality of the process. I think a useful trick could be to combine a VCS with (possibly enforced) conventions on how to use it. That might make it easy enough for "normal" users.

I think an Abiword solution would attract quite some people...

I would certainly like it for some use cases, but I think it's really important to be clear on what these are. What's the use case(s)[*] you are thinking of?

PS. Btw, defining use cases clearly and concisely can be a great help. That's one way non-programmers can really help. Hmm... maybe I should implement something on the wiki that makes it easier to document use cases...
