I agree that this dialog is confusing. However, I think its
possibility to remember an font change and apply it repeatedly (by a
keystroke) is useful.

It is, no question about that but I think the two concepts should be separated. Wouldn't it be better to have a "copy style" button* in addition to the "Font" button? This means that one would have to first set the a chunk of This style should just focus on font properties IMO without looking at language issues. The language would then have to be set independently as this is a much more frequent operation than changing font properties (context menu should help here).
