This is because our content is in UTF-8 format. Without this setting
pmwiki assumes another encoding.
I suspect that's due to the web server rather than PmWiki, but I'm really
not sure. Anyway, I moved the setting to the farm configuration file, so
that it's automatically set for all the wikis.
