The "latex" comes from the fact that insetlistings plays dirty tricks
(like ERT) to make sure that it contents is not spell checked (forcing
language to "latex"). However, the contents of the caption inset which
is inside the listings inset is not in latex language.

Actually, I do not think LyX should _ever_ output a
\selectlanguage{latex} command. You are missing a "language !=
latex_language" test somewhere.
