There's a start of a description of LFUNs like font-bold here

The following LFUNs called @@font-<something>@@ toggle (enable/disable)
different kinds of font styles. For instance, try %key%M-x font-emph%% to
enable the ''emphasized'' font style. Note that you can select some text
and then invoke the command in order to apply the font style to the
selection. Also note that some of these font styles are only available in
formulas (i.e. in the math-mode).
