One thing you might try to see if T'bird is the culprit, is to use the portable app version, either installed on a USB stick or into a folder of your choice. The caveat is that you'd be manually starting it, so that may obviate the suspicion that it's network delays that are the cause.
I will try that, but as both Flatpack and Snap versions exhibit the problem I am not sure that another version will help - but worth the effort to see. Of course I will have to wait overnight to test.
Have you tried any other mail client to see if it suffers a similar issue?
No I haven't but I would prefer to remain with Thunderbird if possible.
I assume that your mail server runs 24/7 and is a separate device to 
that which you run T'bird on?
What's the network setup i.e. wired, wireless etc?
Network is a wired network and the server runs 24/7. This has never been 
a problem before and there are no other issues with the server, only 
since the upgrade and associated change to Snap.
