Hi Andrew. I suspect the paper tray and paper type can also be set via software commands, and override your manual settings.
Have you tried looking at the printer settings in CUPS? "http:\\127.0.0.1:631" in a browser on the same PC. Select the "Printers" tab, click on the entry for your printer, and select "Set default options" from the pulldown menu. Hopefully there you will be able to set the default paper size and source. (Last Epson printer I owned was an LX-80 dot matrix clunker, so I have no experience with the XP6000.)
